We are a group of active citizens and active people who worked - fermented the idea of returning to a natural - balanced environment and evolved into a Social Cooperative. Our dream is the presence of man in the environment with respect and positive action, marrying old knowledge with a new, fresh perspective. Our goal is continuous work - collaboration to find the balances, the alternatives, the methods for our placement in nature, in our direct contact with the means of production and nutrition, in our dominance over every food resource, in the promotion of friendship with man and the environment of agriculture and animal husbandry, in sustainability. The Spira Gi group chose as its legal form that of the Social Cooperative Enterprise. The form of Social Cooperative or Social Cooperative Enterprise (Coin.S.Ep) is a new legal possibility in Greece introduced by law 4019/11. Coin.S.Ep is the main body of the Social Economy, i.e. the space that lies between the public and the private sector, the one that is usually called the third sector of the economy. In addition to the K.S.Ep, many other organizations are active in this area, such as associations and unions, cooperatives and networks, non-governmental organizations, etc. with the basic characteristic that they are grassroots ventures of civil society. The basic principles of a Social Cooperative Enterprise are the group - cooperative that establishes and operates it, its social character and purpose, its viability as an economic but non-profit unit. These businesses are created and registered/published in the Social Economy Register of the Ministry of Labour, Social Security and Welfare. We aim to promote local and collective interest, to promote employment, to strengthen social cohesion and local or regional development.

We are in favor of the economy of the common good, of sustainable development and of the defense of the welfare of future generations. We think that the GDP (Gross Domestic Product) must be added a lot of GDH (Gross Domestic Happiness) to make things work well.

The HUERTO CARACOL is still in its early stages, we have only been doing this for 2 years. We have opted for this healthy way of producing food out of our own conviction and we want you to come to the same conclusion. We are in a farm 30 minutes from Seville, which is open to all of you, where we will be delighted to welcome you. A privileged location for the development of typical agriculture. El Huerco Caracol is characterised by its cultivation of seasonal vegetables (cabbages, cauliflowers, celery, broccoli, lettuce, red cabbage, spinach, chard, potatoes, tomatoes, peppers, courgettes, pumpkins, aubergines, spring onions, etc...). In this project we will try to meet some of the needs that exist in modern societies, a widespread activity in Europe, and we will try to satisfy them by filling the gap that extensive and aggressive agriculture has caused and that has almost completely destroyed traditional agriculture and healthy food.
Del huerto a la carta was born to seek a unique, exclusive and artisan quality product for exquisite palates. To achieve this it has been necessary to go back to the origins, to love and passion for hand made crafting, yet looking forward to innovation, the new proposals of agriculture and current gastronomic trends, which lead us to seek a unique product. Starting from the exploration of traditional approaches such as organic, ecological, biodynamic, natural and permeaculture, obtaining from all of them a common base which is the link between agriculture, nature and the respect for balance and time.

The adventure began in 2003 with the creation of our dairy workshop Mare Nostrum, the alma mater of the project, a cheese and dairy shop located in Castilblanco de los Arroyos, in the Sierra Norte de Sevilla. There we make cheeses from raw goat's milk from the native Florida Sevillana breed of goat, farmed in extensive dehesa pastures, by a manual process and using only our own natural ferments. In 2016 we decided to open our own shop in our hometown, Seville. A place where we can show the world what we are passionate about: conscious eating and, above all, raw milk cheeses.
The goatherd ancestors of the Sierra made delicious and exquisite cheeses. Monte Robledo has rescued this recipe of ancestral tradition for the tasting and recognition of the Sierra de Aracena y Picos de Aroche, not only for its hams and sausages, but also for its cheeses. Monte Robledo cheeses have acquired great prestige, being offered by gastronomic companies of very select clientele in Andalusia, Madrid, Valencia, the Basque Country, Catalonia and also being marketed in France, Italy and the United States. The cheeses are made with raw milk and are cured naturally, that is to say, we respect the flora that naturally grows on the cheese, and it is this flora that gives the characteristic flavour of our cheeses, with a penetrating smell and taste (cured cheeses).

Charcuterra is a gastronomic handicraft company where we offer a range of high quality vegetarian and vegan products, designed to complement your daily diet, providing aroma and flavour to your everyday and festive dishes. We consider it important to recover the art of traditional cooking, far from artificial additives. We only use natural preservatives: sea salt, spices, cayenne, extra virgin olive oil, vinegars or tamari. As far as possible, we choose local and/or fair trade raw materials. We work with conscious food, from the choice of raw materials to the delivery of the product. The ingredients we use have been carefully selected, prioritising the Spanish origin and taking into account the nutritional value at all times. Without a doubt, the worldwide fame of Spanish sausages is well deserved. In each region, each district and each village, different sausages are prepared, following techniques that have been handed down from family memory. Charcuterra has created an alternative and healthier version of these traditional products, protagonists in all regions, combining tradition and modernity. All our products are made with top quality ingredients, with organic certification. They contain no artificial additives or preservatives. They do not contain gluten or lactose, as the main base for their preparation are nuts and gluten-free cereals such as millet, teff, buckwheat, corn... An added value is the convenience of consumption. You open the packet and they can be cooked on a griddle, in the oven or in a frying pan with very little oil in just a few minutes. Ideal for adding to pasta dishes, pizzas, pies, quiche... in legumes and stews, add at the end of cooking.
